Fresh and Healthy Stuffed Peppers (Recipe)

Fresh stuffed peppers...taste so good they're almost naughty.

If you want a something different, something bold, something fun to look at...here's a little dish for you: stuffed peppers. Easy to make. Delicious to eat. A good way to get 'all your colors in,' too, especially if you stuff these with a variety of finely chopped veggies.

You'll need (see photo gallery below):

  •  ½ lb lean ground turkey
  • 1 cup spinach, finely chopped
  • ½ zucchini, chopped
  • 4 tbsp light cream cheese
  • 1 cup marinara sauce
  • (Optional: Add chopped yellow/red mini peppers for color)
  • 1 large green pepper
  • 1 large yellow pepper
  • 2 oz. reduced fat mozzarella cheese

Preheat oven to 425 degrees.

Season and cook ground turkey until brown. While turkey is cooking, finely chop spinach and zucchini (and any other vegetables you might like). Place in mixing bowl, and add light cream cheese (light whipped is even better), light mozzarella cheese and marinara sauce. Add cooked turkey to the mix.

Cut each large pepper in half, removing insides, and fill with the fresh and healthy mix. Place stuffed peppers into baking pan. Top each pepper with two tablespoons of marinara sauce and dust with parmesan cheese. Bake in oven for 30 minutes, or until golden brown.

Plate it up and enjoy.
