Chickpea 'Orzo' - Protein & Fiber

This chickpea rice orzo recipe gives you loads of protein and fiber.

I probably ate two servings ‘cause I was starving! That’s about 22g of protein and 10g fiber just in the chickpea ‘rice’ alone.

Chickpea pasta or rice are great options for vegans to get extra protein (though this recipe is vegetarian, not vegan, because I love cheese).

There are several brands of chickpea pasta. I got the Banza chickpea rice at my local supermarket.

  • 1 pkg Banza chickpea rice
  • 1/2 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • Sprinkle of garlic powder (or more if you want)
  • Add (more) salt and pepper to taste

Boil the rice according to the package. Drain. Add the other ingredients. Done!

I added more Parmesan on top (because I love cheese. Did I mention that?) A little Parmesan can go a long way when it comes to flavor.

This healthier orzo recipe is easy to make. You can add a side salad or make a side vegetable dish to add more volume. High volume low calorie foods are great for weight loss.
